Pumpkin spice has really been the go-to fall flavor the last few years. I myself have become quite fond of various pumpkin spice foods. This fall I’ve decided to expand my own cooking with pumpkin spice. I always cook our pancakes from scratch, so for this month’s #NationalPancakeDay I decided to throw some good ol’ pumpkin spice in! Here is my healthy pumpkin spice pancakes recipe!
HEALTHY Pumpkin Spice Pancakes Recipe
Ingredients: Healthy (And Other Options)
2 Cups Old Fashioned Rolled Oats (or your preferred flour)
1 tsp. Baking Soda
1 tbsp. Stevia (or your preferred sweetener)
1 tbsp. Pumpkin Spice
2 tbsp. Plain Greek Yogurt (or Plain Yogurt or melted butter)
1 1/2 Cup Unsweetened Almond Milk
If using the Old Fashioned Rolled Oats, pour the dry ingredients into a food processor like this Ninja Master Prep Chopper, Blender, Food Processor Combo and process until a sand-like consistency before pouring it into a mixing bowl. If you are using flour, just add all of the dry ingredients to a mixing bowl and whisk to mix it together. Add the remaining ingredients and whisk together until well-blended.
Heat a large skillet or griddle on medium heat. I always use a ladle to scoop the mix out of the bowl and onto my griddle pan. It gives you a nice, similar size for all of the pancakes. If you’re using the oatmeal flour, the top won’t bubble like your traditional pancake mix. Just keep careful watch of the pancakes and flip it when the bottom looks well-cooked!
We don’t use maple syrup on our pancakes anymore. A lot of times we don’t put anything on our pancakes because they are so flavorful anyway. If we do use something as a topping, it’ll be peanut butter, organic honey, or a homemade fruit “syrup”. Top them with whatever you’d like! 🙂
